Arugula, Watermelon and Feta Salad

(http://www.foodnetwork.com/recipes/ina-garten/arugula-watermelon-and-feta-salad-recipe/index.html)

2009, Ina Garten, All Rights Reserved 4 Servings

Ingredients

For the vinaigrette:
• 1/4 cup freshly squeezed orange juice
• 1/4 cup freshly squeezed lemon juice (2 lemons)
• 1/4 cup minced shallots (1 large)
• 1 tablespoon honey
• 1/2 cup good olive oil
• 1 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper
• 6 cups baby arugula, washed and spun dry
• 1/8th seedless watermelon, rind removed, and cut in 1-inch cubes
• 12 ounces good feta cheese, 1/2-inch diced
• 1 cup (4 ounces) whole fresh mint leaves, julienned

Directions

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

Pray it Off 09/15/2011 Song - Iridescent by Linkin Park

Thanks to my BFF Nancy S. for sharing this with me.

Pray it Off 09/15/2011 Serenity Prayer, Autumn Exercise, Taco Soup, Turkey Chili

Prayer of Saint Francis of Assisi

Lord, make me an instrument of your peace.
Where there is hatred, let me sow love;
where there is injury,pardon;
where there is doubt, faith;
where there is despair, hope;
where there is darkness, light;
and where there is sadness, joy.

O Divine Master, grant that I may not so much seek
to be consoled as to console;
to be understood as to understand;
to be loved as to love.
For it is in giving that we receive;
it is in pardoning that we are pardoned;
and it is in dying that we are born to eternal life. Amen

The Serenity Prayer

God grant me the serenity
to accept the things I cannot change;
courage to change the things I can;
and wisdom to know the difference.
Living one day at a time;
Enjoying one moment at a time;
Accepting hardships as the pathway to peace;
Taking, as He did, this sinful world
as it is, not as I would have it;
Trusting that He will make all things right
if I surrender to His Will;
That I may be reasonably happy in this life
and supremely happy with Him
Forever in the next.
Amen.

Pray it Off 09/08/2011 Song - Every Season by Nichole Nordeman

Every Season by Nichole Nordeman

Every evening sky, an invitation
To trace the patterned stars
And early in July, a celebration
For freedom that is ours
And I notice You in children’s games
In those who watch them from the shade
Every drop of sun is full of fun and wonder
You are summer

And even when the trees have just surrendered
To the harvest time
Forfeiting their leaves in late September
And sending us inside
Still I notice You when change begins
And I am braced for colder winds
I will offer thanks for what has been and was to come
You are autumn

And everything in time and under heaven
Finally falls asleep
Wrapped in blankets white, all creation
Shivers underneath
And still I notice you
When branches crack
And in my breath on frosted glass
Even now in death, You open doors for life to enter
You are winter

And everything that’s new has bravely surfaced
Teaching us to breathe
What was frozen through is newly purposed
Turning all things green
So it is with You
And how You make me new
With every season’s change
And so it will be
As You are re-creating me
Summer, autumn, winter, spring

Pray it Off 09/01/2011 Carbohydrates and Flaxseed

Three Mantras info@beckdietsolution.com

“If I want to lose weight permanently, I have to stop eating when I’m upset—every time. People without weight problems don’t eat when they’re upset. They either tolerate their negative emotions or try to solve the problem or call a friend or take a walk or go online or read a magazine or watch television. But they don’t eat.”

“Negative emotions are uncomfortable but not dangerous. I don’t have to “fix” them. I’ve had lots of times when I’ve felt very upset but I haven’t eaten. I’ve never exploded or lost control. The worst thing that will happen if I don’t eat is that my distress will peak and then the intensity of my emotions will go down. “

“If I eat, I’ll be temporarily distracted from my distress but whatever problem led to my distress in the first place will still be there and then I’ll also have the problem of feeling badly that I ate and I’ll really feel badly when I see that the scale has gone up.”

Pray it Off 08/18/2011 Song - God is in Control by Twila Paris

GOD IS IN CONTROL by Twila Paris

This is no time for fear
This is a time for faith and determination
Don't lose the vision here carried away by emotion
Hold on to all that you hide in your heart
There is one thing that has always been true
It holds the world together

God is in control
We believe that His children will not be forsaken
God is in control
We will choose to remember and never be shaken
There is no power above or beside Him, we know
Oh God is in control, oh God is in control

History marches on
There is a bottom line drawn across the ages
Culture can make its plan
Oh, but the line never changes
No matter how the deception may fly
There is one thing that has always been true
It will be true forever
CHORUS

He has never let you down, why start to worry now?
Why start to worry now?
He is still the Lord of all we see
And He is still the loving Father
Watching over you and me, watching over you, watching over me
Watching over everything, watching over you, watching over me
Every little sparrow, every little thing
CHORUS
